Preheat oven to 450. If you're using a toaster oven or air fryer, skip this step.
Finely dice the bell pepper, green onion stems, and jalapeƱos.
Using cooking spray, saute in a nonstick skillet over medium heat for 3-5 minutes.
Add spinach, corn, black beans, and seasoning. Cook for an additional 3-4 minutes.
Remove from heat. Add cream cheese and mix well.
Fold in shredded cheese.
Add 1/4c mix to the center of an egg roll wrapper and roll per the package instructions.
Place egg rolls on lightly oiled (using cooking spray) baking sheet.
Bake at 450 for 20 minutes (air fry at 350 for 15 min), turning over halfway thru baking time.
Serve with guacamole or greek yogurt ranch.
