Road Trip Snacks

We’re Tulsa bound this weekend, and everyone knows road trips require snacks.  Gas stations and fast food restaurants are full of temptation, so I’ve rounded up a few of my favorite make-at-home snacks to help me hit my macros on the road and stay away from those fat-packed, super sugary, pre-packaged options.  All of these can be mixed up in just a few minutes and can be made with items I usually keep in the pantry.

I whipped these up earlier today and man, are they delicious!  The applesauce keeps them so moist, and at 3p / 7c / 1f per muffin, I can eat a few guilt-free.

Clean Eating Banana Blueberry Cookies via Tasting Page
I love two-ingredient banana cookies, and Tasting Page is totally kicking those up a level by mixing in walnuts, blueberries, and more.  Skip the flax to lower the fat content, or try mixing it up with dried cranberries or currants (I’ll be using the latter, since I have them leftover from a salmon dinner last week).

Protein Puppy Chow via A Fit Philosophy
Shhh.  Don’t tell my boyfriend this isn’t filled with powdered sugar and peanut butter.  I don’t think he can tell the difference between this and the real thing!  And, a batch takes about 2 minutes to whip up.

Orange Buttermilk Muffins via Healthy Helper
These muffins are amazing.  They’re made with coconut flour, which can be dense, but the added egg whites and buttermilk keep these zesty muffins light and moist.  Try swapping the orange zest with lemon for a different flavor!

Chocolate Coconut Protein Bars via Gettin My Healthy On
These are a serious food processor win (does it get much easier?), and can be made into bars that pack easy or protein balls that make great portion-controlled snacks.  Unlike other protein and/or energy bars, these only have 3T coconut butter per 8 bars, so the fat is kept low.

Chocolate Zucchini Power Cookies via Healthy Helper
Zucchini and white beans are fabulous volume foods and adapt to the flavor of whatever they’re in, which makes them perfect for mixing into tasty treats like cookies so you can eat more, feel full, and not blow a day’s macros.  These cookies are no exception.  Mix it up by adding unsweetened coconut into the batter, or swapping the chocolate protein powder for peanut butter flavored!

    Whenever I go on a road trip, I always go to Whole Foods first and buy a bunch of prepared foods! Always gets me excited to hit the road – lol! CAUSE I WANNA EAT!

      Great tip. I ran by Central Market today and picked up ingredients to make wraps since we’ll be on the road through dinner.
